As you would have seen in my New Year New Me
post, Mr LVS and I are embarking on a new, healthier way of eating. However, there’s only so far you can go and the one thing I refuse to give up? Chocolate.
The only problem is, chocolate is packed full of things that aren’t chocolate (which makes it taste gooood, but isn’t always so great for your body) and my face inparticular likes to tell me so by breaking out. So I resolved to find a recipe that tasted like chocolate but without all the complicated ingredients that make it up.
Enter the ‘Chocolate’ Pudding – my new love and saviour of all who want to skip the stuff that comes in shiny wrappers.
Looks good right? That’s because it is, and not just for your taste buds, for your insides too – hurray!
Now don’t look at the ingredients and think I’ve gone mad, just trust me.
1 ripe avocado
1 small banana
2 tbsp cocoa powder
1 tsp honey
1 tbsp chopped pistachios (optional)
Throw all the ingredients apart from the pistachios into a blender and blend until completely smooth. You may, like me, need a drop of liquid to get your blender going. If so use just a splash of non dairy milk (almond, coconut, cashew etc. If you don’t have any of those then by all means stick with cow juice) to encourage the blender into action.
Spoon it into a bowl/pretty glass/your mouth and top with the pistachios.
Let me know if you try this – it turned out to be pretty popular when I posted it on Instagram. A few followers made it and messaged me to let me know how it had gone, one hates avocado but she loved the chocolate pudding! Now that’s an achievement!
