A few months ago I came across this
recipe for No Bake Energy Bites on Gimme Some Oven
(adapted from the original recipe over here on Smashed Peas and Carrots
) I was intruiged by the name, and thought I’d check out what they were.
Boy, oh boy am I glad I did! These little balls of wonder are absolutely packed full of protein, and better yet, they taste exactly like Tracker bars
A couple of weeks ago, my nutty boyfriend did the 3 Peaks Challenge. For those who don’t know what this is, it involves climbing the mountains Ben Nevis, Snowden and Scarfell Pike in 24 hours. Madness.
But when he was planning his meals for the 24 hours (you need a lot of food to keep you going!) these little energy bites immediately sprung to mind!
Protein is essential when exercising, and what better for a little helping hand when climbing 3 mountains!
These are very easy to make, and remember, no baking involved! Here’s what I put in mine:
1 cup of oats
2/3 cup coconut flakes
1/2 cup smooth peanut butter
1/2 cup ground flaxseed
1/4 cup milk chocolate chips
1/4 cup dark chocolate chips
1/3 cup of runny honey
1 tsp. vanilla extract
Measure all the ingredients into a medium sized bowl and mix until combined.
Cover the bowl with cling film and pop into the fridge for at least half an hour.
After half an hour, remove the bowl from the fridge, and using your hands, roll the mixture into balls about the size of a Creme Egg.
Pop the balls into a tupperware box or any other airtight container and back into the fridge.
These will keep for about a week, but best as soon as possible!
The best thing about this recipe is because there is no baking involved, you can adapt the ingredients to suit you. Here are some suggestions:
Substitute smooth peanut butter for crunchy or even for almond butter.
Instead of milk chocolate chips, try dark, white, carob, or leave them out completely.
You could always add some dried fruit or nuts to the mix, either instead of chocolate chips or as well as.
